Tandoori Chicken Meal Prep

If your're on a time crunch but still have to meal prep, this is the perfect meal for you! Meat always tastes better when it has been marinated for a couple hours, especially tandoori chicken. We like going to Costco on Saturday or Sunday to meal prep for the week. The best part of going on Saturday is that we can marinate the meat for a day before cooking it on Sunday. You can really tell a difference! Try it out and let us know what you think in the comments.



Ingredients

  • Boneless, skinless chicken (we use 4 small packs of the 6 from Costco which is approximately 16 pieces)

  • 3/4 packet of tandoori mix (you can purchase it from any Indian store)

  • 3 TBS olive oil

  • 1 lime

  • 1/4 cup of cilantro

  • 2.5 cups of uncooked brown rice

  • 3 cups of broccoli

  • Salt and pepper for taste

Method

  • Dry the chicken with paper towels

  • Mix the chicken, tandoori mix, olive oil, lime juice and cilantro.

  • Cover the bowl and marinate for around 16hrs (if you are low on time you can marinate for as little as 30 min)

  • Cook brown rice

  • Place chicken on a pan and bake on 350 for 35 min (if you choose chicken with bones cook for around 40 min)

  • Steam broccoli in a pan with some water, season with salt and pepper.
