Meal Prep - Week 2

One pan meal (well 2 if you count the rice cooker)!



The ingredients

2 cups of shrimp
1 1/2 cups of kielbasa sausage
3 cups of broccoli
2 cups of chopped zucchini
2 cup of chopped carrot
2 cups of asparagus
2 red potatoes
2 TBS of olive oil
Herbs - Thyme, basil, parsley, garlic powder, oregano + Salt
2.5 cups Brown rice

This is for an entire week!


Now make it!


  1. Start cooking your brown rice

  2. Mix together the olive oil, herbs and salt

  3. Place everything else on a baking sheet and then add the oil mixture to it.

  4. Bake for around 20 min on 400 degrees


This recipe serves 5 lunches and is around 420 calories!
