Mini Chicken Pot Pies

If you're looking for a delicious appetizer to take to your New Year's Eve party, you've come to the right place! Here's our recipe for bite-sized pies for easy serving. So here's our secret recipe, ok, not so secret any more..... Let us know how they turn out for you!


Ingredients:

2 tablespoons of olive oil

1 large onion

4 cloves of garlic

2 chicken bullion cubes

1 tablespoon of oregano

1 tablespoon of salt

1 tablespoon of pepper

1 teaspoon of chili powder (optional)

2.5 chicken breasts

1 packet of mixed veggies (corn, green bean and carrot) - we use the frozen kind to save some time

1 can of cream of mushroom soup (the secret ingredient)

1/4 cup of whole milk

2 packets of pre-made pie crust


1. In a large pan, saute the onion in the olive oil until it's brown

2. Add the garlic

3. Cut the chicken into tiny pieces and add it into the pan (if you want to make it vegetarian just take out the meat and add double the veggies)

4. Add in the salt, pepper, bullion cubes and oregano and mix well

5. When the chicken is half cooked add in the veggies

6. once the veggies are no longer frozen add in the mushroom soup and milk

7. If you're feeling adventurous, add in the chili powder. we use Sri Lankan chili powder so I don't use too much. If you are using a milder version, feel free to add a little more. Taste it first!!!

8. Turn the oven to 400 degrees

9. While the filling is on low temperature start rolling out the pie crust into thin sheets and cut them into circles. I use a soup bowl to get the right size but you can use anything that will give you a big enough circle to be just above the lip of a cupcake pan

10. Make smaller circles for the lids of the pies

11. Move the large circles to the cupcake pan and fill each pie (don't over-fill them) and cover it with a "lid". Then pinch to seal

12. If you have any pie crust left over, you can mix it with a little bit of food coloring to make shapes and garnish the top (you can spell out 2020!)

13. Melt a little butter and brush the tops of the lids and bake for around 30 min or until brown in color
