Best. Cookies. Ever.

I know I may be a little biased, but for real... these are the best cookies I have ever made and eaten! My cousin sent me this recipe a couple years ago and since then, I have made it every Christmas. The best thing about the recipe is that if you follow it to a T, they will come out perfect every single time! The recipe makes 45 cookies, and trust me, you will want every single one of them. Ingredients:
4 3/4 cups unbleached all-purpose flour
2 Tbs ground ginger
2 Tsp ground cinnamon
2 Tsp baking soda
1 Tsp kosher salt
Finely grated zest of 2 lemons
2 cups of granulated sugar
1 1/2 cups unsalted butter (at room temperature)
1/2 cup of molasses
2 large eggs
3/4 teaspoon of lemon oil (I didn't use this in mine because I thought it had enough lemon flavor, but do what your heart's desire is)
3/4 turbinado sugar for rolling (I use Sugar in the Raw)
Make it:
Mix together the flour, ginger, cinnamon, baking soda, salt and lemon zest, then set aside
In a stand mixer, combine sugar and butter on medium/high till light and fluffy (about 2 minutes)
Add the molasses (scrape the sides of the bowl)
Slowly add the eggs (and lemon oil if you choose to use it)
Mix in the dry ingredients for about 30 seconds
Cover and place in fridge for at least 2 hours or overnight
Preheat the oven to 350 and line the baking sheets with parchment paper or non-stick mats
Scoop 2 Tablespoons of dough (I use a small ice cream scoop) and form a ball and roll it in the turbinado sugar and place it on the mat.
Place them 2 inches apart and slightly flatten the balls
Bake for 6 minutes and rotate sheets from top to bottom and front to back
Bake for another 6 minutes
Leave the cookies to cool on the sheet for 1 min, then move them on to cookie racks to cool
We love giving these to family, friends and co-workers so we dress them up with cute wrapping from Michaels and customize it with a little note.
